Vegan (and WFPB) Sunflower Seeds Pesto

I just love pesto, especially when it's a vegan and healthier version without oil. We use sunflower seeds and cashews. Due to corona we cannot find any pine nuts but you can add some toasted pine nuts for a richer flavour.

toasted sunflower seeds
you can leave out the toasting but their flavor is much better when toasted
12 cup
cashews
12 cup
fresh basil leaves
2 cups
garlic
2 cloves
lemon juice
2 tbsp
salt
12 tsp
pepper
1 pinch
water
12 cup

Toast sunflower seeds in a non stick pan for several minutes on low to medium heat. Stir constantly so they don't burn. They should be brown but not black (burnt).

Mix all ingredients in a food processor or blender. Check and adjust seasoning.

Serve with pasta or in sandwiches.
