if you have some very ripe bananas sitting around and you're thinking they might go to waste, don't worry - they are perfect for these banana-bread-style muffins.

Ingredients

Dry
oat flour
make it by grinding rolled oats
2 cups
flax seeds or chia seeds
ground
2 tbsp
baking soda
1 tsp
baking powder
1 tsp
salt
12 tsp
Wet
medium bananas
mashed
make sure that they are ripe and have brown spots

maple syrup
14 cup
apple sauce
12 cups
Fillings
almonds(optional)
chopped or ground
can be substituted with walnuts or any other nuts you like

dark chocolate chips
chop dark chocolate if you don't have chips
you can use up to 150g chocolate per taste
50 g
cherries
fresh or frozen
you can use blueberries or some other berries instead

Preheat the oven to 180C
Mix dry ingredients

Grind oats

Grind rolled oats to flour

Grind flex seeds

You could also buy ground flax seeds, but ground flex seeds are best used fresh because they don't react well with air and light after their shells are broken. After grinding, you can keep them in a dark, airtight container in the fridge for several days.

Add baking powder, baking soda and salt, and mix all dry ingredients well.
Mix wet ingredients

Mash bananas

Peel bananas, break them down to pieces using your hands, and mash them in a bowl using a fork.

Add maple syrup and apple sauce and mix.

Combine wet and dry ingredients and stir to incorporate.

Add cherries, chocolate chips and chopped almonds and mix it all together, but don't overdo it so cherries don't fall apart.
Bake & serve

Bake for cca. 20 minutes, or until an inserted toothpick comes out clean.

Let the muffins cool for an hour before serving, to firm up.
