Pasta With Peanut Butter Sauce, Tofu and Broccoli

whole wheat pasta

firm tofu
diced
we use smoked tofu

or soy sauce

Prepare all ingredients

Step
Dice tofu, mince garlic, slice onions, chop cabbage...
Cook pasta

Cook pasta according to instructions on the package
Cook tofu and toast sesame

Meanwhile, in a non stick pan or a grill pan cook the tofu for several minutes stirring often, until tofu becomes nicely browned. If you don't have a non stick pan then you may need to use some oil here, or you could just add uncooked diced tofu to the pasta when bringing everything together.

Remove tofu from the pan, and add the sesame seeds. Stir them for a few minutes until they become golden brown. Remove from heat so they don't burn.
Cook vegetables

Cook onions and cabbage for a few minutes. If you are not using oil, add a few tablespoons of water a time so they don't stick.

Add broccoli and cook for several minutes, until it starts to soften. This will take longer if you are using frozen broccoli.

Add swiss chard and keep cooking until broccoli is easily pierced with a fork, and swiss chard has wilted.
Bring it together

Mix the sauce

Step
Mix ginger, garlic, tamari, peanut butter and lemon juice.

Drain the pasta. Add pasta, vegetables, tofu, sesame and the sauce to a large skillet, and cook for a few minutes to let everything incorporate and heat up evenly.
