Cornbread With Swiss Chard and Zucchini

Ingredients

leek
finely chopped
can be replaced with onion
1 stick
garlic(optional)
minced
3 cloves
swiss chard
washed, cleaned and chopped
can be replaced with spinach
300 g
corn flour
112 cup
whole wheat flour
112 cup
salt
2 tsp
baking powder
1 tbsp
sparkling water
12 l
medium zucchini
grated

sesame seeds

Cook greens

In a skillet, cook leek and garlic (if using) for a few minutes. Add swiss chard and cook until it's wilted. You can cook this on olive oil or on water. If using water, just add a few tbsp of water a time so it doesn't stick. Let cool a little bit.

Mix dry ingredients

Mix all flours, salt, and baking powder.

Add wet ingredients

Add olive oil, grated zucchini, cooked leek and swiss chard, and sparkling water. Mix well until everything's incorporated.

Preheat oven to 200C.

Pour the mixture into an oven pan which you have previously lined with baking paper.

Sprinkle with sesame seeds on top.

Bake for around 45 minutes on 200C.

If the sesame is still a bit pale after baking, you can put it under the grill for a few minutes so it becomes fragrant and golden.

Slice and serve
