With only a few ingredients, hash brown pie is very simple to make. Potatoes are a comfort food, and so is this dish.

If you're using new potatoes, you'll probably need less water because the potatoes will contain more water themselves. In any case, add water a bit at a time because it shouldn't be too watery.

chickpea flour
Chickpea flour makes this dish healthier and increases the amount of protein. If you don't like it, then you can combine chickpea and all-purpose flour, or use just all-purpose flour. I don't recommend whole-grain flour because it makes the dish mushier.

Preheat oven to 200C.

Grate potatoes and onion. You can use a food processor or do it by hand. If you think it's gonna take long, then you can grate it into a bowl of water to prevent it from discolouring. When you're done, simply strain it.

Mix all ingredients in a large bowl.

Grease the baking dish with some oil.

Transfer the mixture to the baking dish and flatten it using a spoon or spatula. I'm using a standard oven baking dish.

Bake for ca. 50-60 minutes. It should be golden brown when done.

Serve with garlicky sour cream/yogurt and salad.
