ground flax seeds

make it by grinding rolled oats

Wet
iranian dates
or Medjool dates but use 1/2 the amount because they are bigger

water to blend with dates
if you want sweeter cookies, you can use maple syrup, agave or honey here

Strawberry filling

dark chocolate
use chocolate that you like to eat. I use dark chocolate with 72% cocoa content

Preheat the oven to 180C

Mix flax seeds and water and let it sit for several minutes.

Mix all dry ingredients.

Blend dates with water (or sweetener) and apple sauce. In another bowl, mix it with flax egg and vanilla.

Add wet to dry ingredients and mix well.

Shape the cookies

Put some baking paper on a baking pan. Make around round 10 cookies and place them on the baking sheet.

Using your fingers or a spoon, make a hole in every cookie. They will pretty much keep their form while baking. This will be a placeholder for chocolate and strawberries.

Bake

Bake for around 20 minutes.

Prepare strawberries

Wash and slice the strawberries in half.

Melt chocolate

Mix chocolate and plant milk, and melt it (e.g. in a dish over simmering water, or in a microwave).

When the cookies are done, pour the melted chocolate into the holes and while the chocolate is still warm, put some strawberries on top and press them into the chocolate.

Let them cool

Wait until the chocolate firms up and serve. They are best stored in the fridge.
