celery root

sub with raisins but use half the amount

walnuts
chopped a little bit

avocado

beet
grated
1 small
carrot
grated or cut into matchsticks

purple cabbage
grated
1 cup
arugula
chopped
2 cups
apple
grated

Dressing
Iranian dates

lemon juice
12 lemon
cashews
soak them in hot water for 15 minutes beforehand if you don't have a high powered blender

water
you might need more water if you didn't soak the cashews, depending on desired dressing thickness

Prepare celery

Some people eat raw celery, but I find it better blanched. Put it in boiling water and simmer for around 5 minutes. Then put it in cold water to cool and stop cooking. Then grate the celery.

Mix salad

Step
Chop, slice, grate and mix all salad ingredients.

Prepare dressing

Step
In a blender combine all ingredients for the dressing. Add more water if needed.

Serve fresh.
