A vegan twist on moussaka - this is a hearty potato-based dish with tasty lentil filling, covered with cashew sauce.

Ingredients

large potatoes
sliced (ca. 0.5 cm thick slices)

cashews
soak them in hot water for 15 minutes if you don't have a high powered blender

Cook lentils

Boil water, add lentils and salt and cook covered, according to package instructions. Brown lentils take around 30 minutes. You can replace them with red lentils which have a shorter cook time but will be more mushy and will lose their red color when cooked.
Make lentil filling

In a food processor, process tofu, onion, garlic, carrots and mushrooms. You may need to do this in batches, depending on how many servings you are making.

Move the processed filling to a large pan, on medium heat. Cook for a few minutes. Add tomato sauce, and all spices.

Pour the cooked lentils into the pan. Don't worry if there is still some water left with the lentils, it will mix into the sauce. Cook for a few more minutes.
Make cashew sauce

Blend cashews, water, onion powder and garlic powder. Set aside.
Assemble & bake

Preheat the oven to 200C.

Assemble everyhing in a baking dish. First cover the bottom of the dish with potatoes. Then spread half of lentil filling over the potatoes. Repeat once more (one more layer of potatoes and lentil filing). Cover everything with cashew sauce.

Cover the baking dish with aluminum foil and put it in the oven.

Bake for 1h. Take out of the oven. Check if the potatoes are cooked using a fork. If not, then cover and return to the oven for several more minutes.

Remove the foil and bake until there is no extra liquid remaining, around 10-15 minutes.

You can put it under the grill for a few more minutes if you want it to brown a little.

It's best to let it set for at least half an hour, so potatoes can soak up the remaining liquid. If you're impatient, then eat it straight out of the oven :) Enjoy!
