Cover all soup ingredients with boiling water and simmer until everything is cooked through, around 20 minutes.

Blend the soup using an immersion blender or a food processor.

Add cannellini beans, if using.

This soup is good on its own, but some acidity really freshens it up. Blend cashews, water and lemon juice to make a sour cream topping. This looks nice but it is optional, you can use a bit of lemon juice instead or omit entirely.

Serve with croutons and optionally sour cream or lemon juice. Add pepper and some more salt if needed.
