String Beans Stew

This veggie and string beans stew is a light but comforting summer dish. It's best served with whole-grain bread.

Ingredients

vegetable broth
use enough water to cover all ingredients

string beans
fresh or frozen; cleaned and sliced a little bit if they are large
I used Dragon's tongue bush beans. Replace with some other variety of green beans

Prepare onion, garlic and carrots

If you have a food processor, you can process onion, garlic and carrots. This way they will not be visible in the stew but they will give a nice flavor to it. If you don't have one, you can finely chop onion and garlic and grate the carrots.

Prepare string beans

Step
If using fresh string beans, wash them and remove their ends. Chop them if they are too large.

Cook aromatics

Step
Cook onion, garlic and carrot on medium heat for several minutes. You can use oil or add water a few tbsp at a time instead.

Add vegetable broth, potatoes and string beans. Turn the heat up until the water boils, then turn it back down to medium.

Add tomato sauce and mix it in. You might need to lower the heat a bit more because tomato sauce has a lower boiling point than water.

Add salt, sweet paprika, chili and any other spices you like.

Cook for about an hour or until the string beans are soft (depending on the variety you are using).

Just before you finish cooking, add some chopped fresh parsley. Add some pepper, and adjust seasoning per taste.

Serve with whole-grain bread.
