This nutritious and delicious pasta is a super simple dish to make, when you'd like something homemade but don't really feel like cooking.
This pasta is so simple to make, but it's still very filling and nutritious. If you want more of a protein boost, you can use pasta made of chickpeas or lentils instead of that made of whole grains.
If you're in a rush, you can use frozen greens to skip washing and chopping. And don't skip the parmesan topping! You can use store bought parmesan, but I recommend making this quick homemade parmesan recipe that you can whip up before your pasta is done cooking.

whole grain pasta
140 g
cashews
if you don't have a good blender, then soak in cold water for a few hours or for 15 minutes in boiled water
1 cup
water
1 cup
garlic
4 cloves
salt
12 tsp
scallions(optional)
chopped
replace with onions or leek
2 
swiss chard
washed and stems removed, then chopped; or use frozen
replace with spinach

Make the pasta

Cook pasta according to package instructions.
Make the sauce

Strain and rinse the soaked cashews.

Blend cashews, garlic, water and salt.
Bring it together

Add scallions and swiss chard to a non-stick pan.

Cook swiss chard and scallions until swiss chard is wilted and cooked.

Pour in the sauce. Cook for a few minutes so garlic is cooked and it's flavor is not too strong.
Serve

Serve sprinkled with vegan parmesan.
