Base
mixed fruits

Use any fruit you like. I used fresh peaches, plums and figs.
1 kg
balsamic vinegar
1 tbsp
cinnamon
1 tsp
vanilla
1 tsp
brown sugar(optional)
Leave out the sugar for a healthier version.

Topping
walnuts
ground

hazelnuts
ground
1 cup
ground rolled oats
1 cup
maple syrup
1 cup

Prepare

Wash and slice the fruit. Grind walnuts, hazelnuts and make oat flour.

Preheat the oven to 180C.

Add sliced fruit to a baking dish. I used a 20x28cm dish.

Add balsamic vinegar, cinnamon, vanilla and sugar (if using). Mix well.

Make topping

In a bowl, mix ground walnuts, hazelnuts and oat flour. Add maple syrup, and mix well until it becomes crumbly.

Spread topping over the fruit.

Bake for 30 minutes.

Take out of the oven and let it cool a little bit.

Serve warm with ice cream, or on its own. It can also be eaten straight out of the fridge as a refreshing summer snack.
